Serves: 3 (2 wraps each)
Prep time: 20-25 mins
- 1 medium yellow, green and red bell pepper
- ½ medium yellow onion
- 1 medium jalapeno pepper (optional)
- 400g firm tofu
- 6 flour tortillas
- Black pepper, salt, red chili powder, cumin, turmeric, paprika (optional)
- Lemon juice
- Hot sauce
- ½ ripe mashed avocado (optional)
1. Prepare veggies
Thinly slice bell peppers, onions, jalapeno peppers and tofu. In a medium pan heat the olive oil over medium heat. Add cumin to the oil. Once shimmering add all the veggies and toss firmly to combine. Cover and cook over medium heat for 5 minutes. Add freshly crushed black pepper, red chili powder, turmeric, paprika powder and a dash of salt while stirring occasionally. Now add lemon juice, hot sauce and mix. Cover and cook for another 10 mins till vegetables are cooked. Add thinly sliced tofu to the cooked veggies and mix well. Cook for 10 mins so that tofu can absorb all the flavors. Cover the pan and set aside.
2. Warm up tortillas and Assemble
In a medium skillet over a medium heat, warm up tortillas on both sides. Apply mayo on one side and place the veggie and tofu mixture at the center followed by a spread of mashed avocado and dash of hot sauce. Enjoy with your favorite sides.
Notes: If you don’t like to make it spicy you can avoid using jalapeno peppers. It still tastes the same.
